Check this souffle!



It has cheese in it from three countries! Parmesan (italy), Manchego (france spain), Emmenthaler (switzerland). I liked it but I want to try an all-Parmesan version next time.

An aside, I know people can be intimidated by souffles, but this has about 12 minutes of actual work involved and the rest is just oven time. I really recommend it.

Looks good. Manchego is actually a Spanish cheese, though, from the La Mancha region. Every Spaniard made us eat some whenever we went to their houses. Unless of course the French stole the recipe and renamed one of their regions La Mancha, I could be wrong.
