Lentil and Tomato Stew


Chalk this up as another scavenged delicacy. Last night Lauren met Yuko at Yuko's wedding dress fitting, so it was just Noah and I. He went to bed at 7:30, and I was starving. I found a box of "Tasty Bites" Bengal Lentils in the cabinet, and I built dinner around them. These are available at Trader Joe's for about $2, and they are very good. I like the Bombay Potatoes and the Spinach, too.

I put the lentils in a pot and added two diced ripe tomatoes. I put in a can of Trader Joe's chick peas ($1) and salt, pepper, a dash of cinnamon and a little oil. I also added two whole garlic cloves and the rest of the minced garlic I had in the refrigerator, about a teaspoon. I brought this to a boil and then simmered it for an hour while I read the news and ate a Nutty Bar to tide me over. About ten minutes before I took it off the stove, I added a handful of frozen corn. This was just great, and there was enough for Lauren to have some when she got home. I'll be making it again for sure.
