Two Wonderfully Delicious Summertime Dinner Recipes!

A week and a half ago, I did something that I've never formally done before - I went to see a nutritionist! Well, technically my good friend has not quite graduated yet, but she is studying to become a "nutritional therapist." This is a practitioner that educates people on the healthiest diet for them and also looks for any vitamin or mineral deficiencies, absorption issues, allergies of problems with different food. If a patient is having various issues in their day to day life, a nutritional therapist will attempt to help ease these problems through the use of vitamins and other whole foods.

My friend, who I think is brilliant and look up to very much, was in need of several "practice clients" in order to become licensed, and I agree to be one of them! It started with a very long questionnaire and survey, followed by a food journal that I wrote in for three days, and a two-hour intake appointment and preliminary recommendations. Today I visit again to check in, and have the second half of my exam, which is called a "functional exam." I'll be palpated in certain places to see how my different systems are functioning and to test for nutritional deficiencies.

Anyway, nobody had to tell me, as a the kind of vegetarian that I was, that I was not getting enough protein in each day, and I was relying on too many carbohydrates in my diet. Too much added sugar as well. So, my friend started me on a nutritional overhaul. I wasn't so so bad in my eating, but there were definite things I could tweak. I was offered the "baby steps" route to changes or the jump-right-in approach. I chose to "jump-right -in," but my friend asked me several times if I was really sure and now I see why. Remind me next time to take baby steps. 

Mainly, at least for two weeks, to reset my body, I was instructed to avoid all sugar and carbohydrates including grains and starchy vegetables. No sweets, nothing with added sugar.  (This is the hard part). I could and should have, lots of water, all the green, leafy veggies and non-starchy veggies that I would like. Eggs, butter, any meats that I can bring myself to eat, tofu, milk or almond of coconut milk, nuts, limited, low glycemic fruit and for me, plain, full fat yogurt and other fermented, no sugar added dairy is ok.

Surprisingly, REALLY surprisingly, it hasn't been as difficult as I expected it to be! I mean, it's SAD not being able to eat cookies and pasta,  don't get me wrong, but it wasn't incredibly difficult. I spent over a week having eggs and cauliflower pizza and zucchini "noodles" and protein shakes and Greek yogurt with almonds and a few strawberries. It wasn't so bad. I even agreed to try chicken a few times but just couldn't really do it. Guys, I'm a vegetarian at heart. I know I truly am.

Eventually it became a little repetitive though, and I'm starting to really miss the freedom of eating  any fruits of veggies that I would like, lentils and beans and quinoa, etc. My friend agreed, if I can't stomach the meat, I need to add more vegetarian friendly foods in. Well see what she says today. (Edit: Yes! I've been given the green light on adding in some extra options for protein and a bit of carb. Phew! LOL.)

I will say though, it's so great. I've learned to trade out my almond milk creamer which has 4grams of sugar per Tablespoon, for an unsweetened Almond and coconut creamer and I was fine! My Justin's brand Almond butter was swapped for a no sugar added almond butter and I was still ok! My beloved fruit on the bottom Greek yogurt, traded for plain, Greek yogurt and it didn't kill me. Incredibly, I have not touched a piece of bread or pasta in nearly two weeks and I'm ok with it.

We'll see how this goes, but not matter what, I am very happy with the small changes, and I only hope to build and build upon them to make happier, healthier habits. I am certainly learning a lot.


Today I have for you, two new recipes that Jon and I have recently tried out. Both were just delicious and I'm so excited to share them with you. I feel like they make great summertime dishes and hope you enjoy them as much as we did!

The first is called "Thai Noodle Bowls with Almond Butter Tofu" by the Minimalist Baker. Oh it was divine!!!! Jon and I absolutely loved this recipe. You bite into cool, crispy pieces of shaved carrot, crunchy bell pepper and the most refreshing cucumber. The veggies lay on cold rice noodles and everything is drizzled with a light, garlicky-lime dressing. Then, you put on top, the most flavorful, warm tofu which has been pan fried and tossed in a creamy almond butter, soy sauce. You just get this interesting mouthful of temperatures and textures and flavor. It was incredible. The recipe calls for some red pepper flakes for the tofu sauce. We used about half the amount of spice for me. 




Next up,  in my quest to try and learn to like seafood, we attempted a "Lemon Butter Scallops" recipe by Damn Delicious.  It was damn delicious. I still had a difficult time getting scallops down, I felt so guilty, but they tasted great. I even liked the "zoodles" - zucchini noodles that I made with my new 
OXO Good Grips Handheld Spiralizer. This thing is perfect by the way, for any beginner "spiralizer," or when you just need to make a dish for one, two or a few people.

The buttery lemon-garlic sauce complimented the scallops perfectly and seasoned the zoodles so well, that you wouldn't even miss actual noodles!


Jon, who is not watching his carb intake, placed his scallops on some homemade polenta. he said it was delicious. Everything was topped with parsley and voila!  Very simple.


I hope you might try one or both of these dishes. It's such a joy to find new recipes and give them a shot. I'm lucky that Jon loves cooking and is such a great husband. :)

Trader Joe's Challenge: Day Three!



Oh you guys, how in the world did I forget to take pictures of dinner tonight?  This Trader Joe's Challenge is a big deal! (Well, to ME.) You'd think I would remember to snap at least a picture or two. 

Since I forgot, I'll just be sure to make up for it with several random cat photos later on in this post..........................

So tonight Noah was invited over to my parent's house for steak.  Because, he is a prince. They love indulging Noah in his favorite meal, and I image bask in the glory that they are able to get him to eat, unlike me.

That meant it was just Jon and I for dinner.  Because of this, I didn't start dinner right away, and instead did a bit of on-line work. By the time Jon got home, I still hadn't started dinner, but it was ok, because both the Strawberry Gorgonzola Salad, and the Grilled Veggie Sandwich With Lemon Garlic Sauce only had a five minute prep time. No cooking needed! 

I know that five minutes and no cooking sounds a bit suspect, but really, for a super-fast dinner, it wasn't half-bad! Everything was quite fresh, except for the frozen, pre-grilled  eggplant and zucchini. But, I could certainly think of a thousand worse pre-packed foods.

The sandwiches were so easy to put together, and fast! Basically you thaw or defrost the veggies in the microwave. Personally, Next time I am going to find a way to crisp them up. Maybe in the oven.
While that's going on, you make a WONDERFUL sauce to spread on the dinner rolls, made from a little bit of mayo, lemon juice and crushed garlic. It was fantastic! I used a gluten-free English muffin for my sandwich, and it was great.

When the veggies and sauce are done, you layer sauce, some arugula, veggies, and feta cheese. SO delicious, and reasonably healthy!

The Strawberry and Gorgonzola Salad was your typical berry/nut/cheese salad. I just love the sweetness of the strawberries, mixed with the salty Gorgonzola. You can choose to go as light or as heavy as you want with the ingredients. We also made our own dressing, per the recipe. Simply two-parts olive oil to one-part balsamic. It was just TOO easy!

One of the best things about this meal, besides be super quick and easy, is the fact that we have tons of leftovers for lunch tomorrow. You really get at least four meals/ servings out of this one. I highly recommend. 

Oh! And just so you know, the homemade hummus WAS better the next day. I really like it a lot!

I've never had a big problem with keeping the house nice and tidy, but certainly there are a few areas prone to clutter, and believe me, cleaning is not one of my most favorite activities.  I love how each day of the FlyLady's newsletter and daily plan, includes "tasks" and "zones" to tackle. I love the FlyLady's website and I listen to her different series on podcast all the time while I clean or work at home.


Oh, and get this, FlyLady TV has BOTH Noah and I cracking up. The Flylady is really funny! You should check the videos out for yourself.

Please be careful that you don't hurt yourself trying to move furniture. If it is too difficult to get under the couch or chairs then just try to get as close to the base of the furniture as you can.

Trader Joe's Challenge: Day Two!



Day two, and the Trader Joe's Challenge is going strong! Tonight I made Shakshuka and homemade hummus for dinner.

Tonight felt like endless cooking. Not because the shakshuka was difficult to make, or the hummus for that matter, they weren't! Only because I had to make TWO dinners tonight. Noah had a sweet, little friend over for a playdate. His buddy seems to be a great and adventurous eater. Even exalting his love for tofu and pickled cactus on the ride how from school. I knew though, that Noah would never touch the shakshuka with a ten-foot stick. So I took the path of least resistance and served the boys something that I knew they would like... pasta with Parmesan cheese. Except for Noah. No cheese. Go figure.

Once their meal was cooked, eaten and cleaned up, I went onto ours. Honestly, until recently, when I heard it mentioned twice, I had no idea what shakshuka was. No idea whatsoever. Shakshuka is of middle eastern origins. I have a feeling that many middle eastern countries have their own version shakshuka and unique spellings. 

I loved that this dish was one-pot cooking. Everything was made in the pan that Jon's holding. You sautee' a ton of garlic and onions in olive oil, and then add the spices....cumin...paprika, thyme and basil. A chopped red bell paper is thrown in, stewed tomatoes too. Everything simmers for 30-40 minutes or longer. When you're ready to eat, the last thing to do is crack some eggs gently on top, cover with foil, and put into an over at 350 degrees. And there you have it!

One great thing about shakshuka is that you don't have to worry too much about it being over-cooked. Well, within reason, before adding the eggs. Jon was tied up at work and ending up coming home later than his usual time. I just let the shakshuka simmer until he arrived home, and it was still delicious.



If I had more time, I would have made a nice salad and some fruit to go along with this dish, but today was busy, so I didn't have much time. What I did make though, was some SUPER easy hummus. I couldn't believe how simple it was. You just throw some garbanzo beans, olive oil, lemon juice, tahini, cumin, garlic and salt in a blender and...blend! That's all there is to it! I've made hummus in the past, but this time it just seemed easier.


The hummus was good, but the recipe recommended letting it sit for several hours. I think that gives the ingredients a chance to meld their flavors together. I can't wait to try the hummus again tomorrow.

We really don't eat too fancy around here most of the time. This was it tonight, just simple. I had some leftover peas from the boys' meal, and I toasted a bit of gluten-free bread to dip in the hummus, as we were out of pita.

Sliders

On the way home from the PBR, I stopped at Hunter House for dinner. What can you say about this meal? Every six months or so, you need it. I can't eat this way often, but when I do I try to make it worth it.


Hunter House has great sliders because the onions are so terrific. The fries are good too. While I was waiting for my order, I was looking at the menu behind the counter, and I saw you can get a grilled sweet roll for breakfast, which sounds amazing. If sweet rolls are good, and grilling things is good, putting them together is a natural.

One thing I wonder about - I put a nice tip in the tip cup, but no one saw me do it. I left thinking, "I hope they don't think I stiffed them on the tip since they didn't see it happen." It's a tree falling in the forest - if the person taking your order doesn't see the tip, did it ever happen? This is not the first time the thought has crossed my mind, and I can't be alone here. Do unseen tips count? Karmically sure, but can you show your face again?
