Suslow and Marita Cantwell from the University of California at Davis discuss the cultivation and handling of the snow (and snap) pea with special recommendations on maintaining quality post-harvest. Since post-harvest is how I eat most of mine, this is good information. Remember, these guys are sort of fragile, so treating them well pays dividends in taste and quality (and wards off that nasty soft-rot bacteria. Blech).
