Light Lunch



I have not been cooking very much lately, but this was worth mentioning. This is an open-faced portobello sandwich with roasted potatoes and onions. The vegetables were cooked with a chicken Noah and I had for lunch yesterday, and the mushrooms were marinated with olive oil, salt, pepper and lemon juice and roasted at 350 degrees for a half hour with minced garlic and parsley. It was the definition of Tasty on Toast™.
